This is from Beachbody’s new program 21 Day Fix Recipes Banana Oatmeal Cookies. This takes a few minutes to prepare and my favourite clean eating recipe in this book. For those that follow this eating plan, you can only eat 2 cookies (which is one yellow container). As usual, watch my video below for visuals:
Banana Oatmeal Cookies -Yields 8 servings
- 1 cup old-fashioned rolled oats
- 2tsp ground cinnamon
- 1/2 tsp sea salt
- 2 ripe medium bananas, mashed
- 1/4 cup golden raisins
- 1/4 cup chopped raw walnuts
Preheat oven to 350. Mix the oats, cinnamon and salt together. Mash the bananas and mix the raisins and raw walnuts into the mash bananas. Combine the wet mixture and dry mixture together, I used a large cookie scoop and yielded 8 uneven servings, so I think its safe to say that a medium size cookie scoop would be best to prepare this cookie. Tip: flatten the cookie down (trust me on this one). Bake for 10-15 minutes.
