No Bake Coconut Snowballs

Has anyone tried Ferrero Rocher’s sister Raffaello? I love her so much and it’s not sweet like Ferrero Rocher. However, anything from FR is expensive. And I wanted a healthy version for myself. Raffaello, Raffaello, how I love thee. It took me on the second try to get it to what I want. I noticed if I used vanilla extract, for some odd reason, I can can taste a strong hint of alcohol taste and that disgusted me. I also didn’t have to add as much maple syrup. Depending on certain people, you may probably use less than 1 tablespoon or for those that have a sweet tooth, you may need 2 tablespoon. I played it safe and went in the middle to satisfy all my family members: 1 tablespoon. I hope you all will enjoy this super simple recipe.

If your organic unsweetened shredded coconut is very fine and it’s unnecessary to process them, set aside the 1/4 cup shredded coconut -this will be used in the end to coat the coconut snowballs. As in the the video, my shredded coconut are thick and long pieces so I had to shred them and set them aside.

Use a food processor to process the 2 cups of shredded coconut for about 2 minutes. Then add in the tablespoon of coconut oil and maple syrup to get the ball rolling. If you have Blendtec or Vitamix, this should probably take about 2 minutes or less (I can’t guarantee because I don’t have one). But for those like us with food processors and blenders, it will take about 8-10 minutes to get the consistency you want. However, if you’re impatient like me, sometimes, I process it for 5 minutes and the paste is a bit thicker. It’s possible to form round balls with only processing for 5 minutes but its quite cumbersome when forming the ball -but possible.

Place the paste into a bowl and start forming into little balls. Insert the almonds in the middle and pat to cover the hole. Coat the coconut snowball in the 1/4 cup shredded coconut. Eat it up. And continue to make the rest.
