Sweet Potato Pancakes No Sugar

I really miss pancakes -especially the pancake mix that Costco sells which is currently sitting in the far left end of the kitchen corner. My parents love that batter and they make it every Sunday for breakfast. And I’ve been searching high and low to find an alternative. Low and behold…sweet potato pancakes with no sugar and no flour. I’ve tried using sweet potato and an egg but it doesn’t hold. However, if you make it small enough, it binds but its hard to flip over, eating it is very watery and doesn’t live up to my definition of a pancake. On to the next testing… Coconut flour? Too dense, grainy and bland. Fail. Oat flour? Yields a thick and rubbery pancake. Bland again. Fail. And finally, protein powder. Ahhhhh. Why didn’t I think of that in the first place? Protein powder gives extra flavour and helps bind everything together giving us the round shape. I used brown rice protein powder by Tone it Up. I can’t comment on the end results for other protein powder brands. However, using vegan protein powder that has mixed ingredients hasn’t given me good results in the past for other baked goods. Either stick with whey protein or just a simple vegan protein powder. As for Paleo followers, I’ve tried using 1 tablesoon coconut flour and it turned out well.

Sweet Potato Pancakes No Sugar -Yields 4 Pancakes

  • 1 scoop protein powder (I used Tone It Up Brown Rice Protein Powder)
  • 1/2 cup cook sweet potato (mashed)
  • 1 medium egg
  • 1 tsp coconut oil
  • Optional: vanilla extract
  • Optional: dash of cinnamon
  • Paleo? Use 1 tablespoon Coconut Flour instead of protein powder

In a small pot, bring 1/2 cup or 3/4 cup water to a boil. Start chopping 1/2 of a medium sized sweet potato into cubes. Once the water starts boiling, add the cubed sweet potato into the water. Continue to boil in medium to low heat. Add water if necessary. It takes about 10 minutes to cook the sweet potatoes -to check if they are ready, use a fork to poke through. If there is no effort in poking, it’s done! Discard the water, mash the yam in a mixing bowl and let it cool down before adding in the eggs. Add the protein powder in and mix well. In a small pan, add in the oil in medium heat. Use a cookie scoop for even distribution and use a spatula (or the cookie scoop) to flatten and give the pancake a round shape. It takes about less than 2 minutes before you need to flip. The diameter of the pancake should be 8-10 cm. If it exceeds any bigger, it will not hold and you will be unable to flip the pancake.
