I followed vegetarian mac and cheese recipe a few years back from Oh She Glows. My brothers said, “this tastes good but this is not mac and cheese.” Needless to say, I never made this recipe again as it was very time consuming and I also thought it would taste like mac and cheese but a healthier version.
Moral of the story? It looks creamy like mac and cheese, tastes delicious but it’s not mac and cheese. I learned that using some of the basic ingredients sets off a base for cream sauce and add in your own herbs and spices to suit your taste. The downside of using the Magic Bullet is that I can only grind the cashews 1/2 to 1 cup at a time or it will yield inconsistent cashew powder meal. Flashback to 4 years when I made the mac and cheese recipe, I used the regular blender and it turned out just as fine but it takes longer and you also have to do it in small portions. Using the Blendtec or Vitamix yields quicker results (and greater consistency).
Using the small Magic Bullet cup and flat blade, take 1/2 to 1 cup of cashews and blend it until you get cashew powder (cashew meal). Place the powder into the larger Magic Bullet cup and continue blending the remaining cashews with the small cup. Once you have all your cashew powder into the large cup, place in the garlic cloves, lemon juice, garlic powder, salt and 1/2 cup of water. Blend it together. If it gets stuck, slowly add in a more water if you need (1/4 cup at a time) until it blends smoothly. Once all the flavours are blended together, set the sauce aside and move onto spiralling the zucchinis -watch my video here or below for the full tutorial.

- 2 cups cashews
- 1-2 tablespoons lemon juice
- 4 cloves garlic
- 3 teaspoons garlic powder
- 1 teaspoon salt
- 4 small to medium sized zucchinis
- 4 small to medium sized zucchinis
- 1/2 to 1 cup water
