Spinach Salad Recipe with Farro

This healthy spinach salad recipe is super filling from its high fiber friend, farro (also known as wheatberry, wheat berry and winterberry). I love making this salad because its super easy to prepare, filling and it tastes awesome! You can purchase the quick 10 minute cook time Farro from Trader Joe’s as it is super quick and fast. Alternatively, you can boil them but it takes at least 60 minutes to cook. To save myself time, I like to soak them up overnight and saves you half the cooking time. Watch my video on how to cook farro and wheatberries here. I wish I could give you an exact time frame, but it really depends on your taste -like it super chewy? Then 20-30 minutes if farro is soaked overnight. I also like to use my favourite homemade fat burning dressing. Check out the visuals below:

On a big salad bowl, place in the spinach, tomatoes, bocconcini, farro and mix well with the dressing. Don’t be tempted to make extra dressing, the dressing is super flavourful and not meant to drench the salad. Once everything is mixed in, add in the cubed avocado.

Healthy Spinach Salad Recipe -Serves 2-3

  • 1/2 ripe avocado
  • 10 whole baby bocconcini (more/less if you like)
  • 3-4 cups of spinach
  • 15-20 grape tomatoes (more if you like)
  • 1/2 cup dry farro soaked overnight
